Even so, that doesn't really change anything. They have the ability to answer the phone, it's not like it's an impossible task that only one person in the office can do.

I never said it was impossible for someone else to have answered the phone. The question was “did Janine ever sleep or take a break?”. From ONSCREEN evidence only, she got Christmas off in GB2 and she was at the Gozer building the day of the big battle… If you noticed, her working so hard worked into the “the GBs are really busy” portion of the story and provided a bit of comic relief for her attitude at being so overworked…

In the non movie universe, who knows whether she got time off or took breaks… Better fire up the “What if” machine again…

This is kind of like asking if any of the characters ever use the restroom; just because we don't see it, doesn't mean it never happens.

Yeah, it would seem pretty weird if someone who knew how to handle portable nuclear accelerators wouldn't be able to use a phone.

In the Real Ghostbusters Janine was seen taking time off from work. In Janine's Day Off she visits her family with Egon, and in 2000 Leagues under the Street she and Winston went out to the natural history museum. Also a few episodes showed her apartment from time to time.

Well, during the commercial in GB1, Ray says their “courtious and efficient staff is on hand 24 hours a day”. Seeing as how she is the staff, I don't think sleeps or leaves.
